High Protein Cheesecake Ice Cream (Gluten-Free, Refined Sugar Free)

I finally tried the viral cottage cheese ice cream! It’s full of healthy fats, protein, and is such a delicious, fun frozen treat. It’s not exactly like ice cream, but it’s still SO worth trying 😍 It’s viral for a reason!

This strawberry cheesecake ice cream is gluten-free, refined sugar-free, and only has 4 ingredients! The best part is that you can use this recipe as a base and switch out the fruit and add-ins for different flavors and textures. I feel like this would also be amazing with blueberries and might have to try that next!

What You’ll Need to Make This Creamy High Protein Ice Cream:

  • Full-fat cottage cheese – I love Good Culture!
  • Maple syrup – I use organic.
  • Strawberries – sliced, fresh or frozen.
  • Graham crackers – I used Simple Mills, but any kind will work!

How to Make:

This is probably one of the easiest ice cream recipes you’ll find! Start by putting the full-fat cottage cheese, strawberries, and maple syrup in a blender. Blend until smooth and fully combined.

Pour the mixture into a dish (I love using glass food storage containers). Add more sliced strawberries and crushed graham crackers. Measure with your heart and add as much as you like!

Place in the freezer for 3-4 hours, making sure to stir AT LEAST 1 or 2 times to keep the mixture creamy and not icy. I like to stir mine every hour or two so that it has a good consistency once it’s done and I’m ready to eat some!

  • 1 container full fat cottage cheese

Instructions

  • Blend cottage cheese, maple syrup, and strawberries until smooth.
  • Pour into a dish. Top with more strawberries and some crushed graham crackers.
  • Freeze for 3-4 hours (stirring 1-2x while freezing will help to keep it creamy and not icy!)
