Chocolate Chip Pancakes (healthy + easy!)

Nothing says Sunday morning quite like a good ole fashioned stack of chocolate chip cakes in my house! Which is why I created this super simple (+ healthier) recipe ☺️

All you need for these Chocolate Chip Pancakes are a few simple ingredients. You will NOT believe that they are made with the exact ingredients you would probably find in your bowl of morning oatmeal 😉

For this recipe, you will need

Oats – I typically use Bob’s Red Mill organic and gluten-free oats or One Degree Organics Sprouted oats.

1 banana – for sweetness and texture. I try to use a spotty banana for extra sweetness!

1 egg – okayyy, maybe you wouldn’t find an egg in your morning oatmeal but this will help to create a perfect texture and fluffy pancake. It also adds some protein!

Chocolate chips – I am often asked which brand of chocolate chips I use! I typically use the brand Enjoy Life Foods or Nestle Tollhouse organic + allergen friendly. Both of these brands are made with clean ingredients and do not contain any preservatives or fillers. They are also both vegan and nut-free!

Salt + baking soda

Can I swap something else for the chocolate chips?

Absolutely! Feel free to swap the chocolate chips for blueberries, raspberries, banana slices, nuts— whatever your preference is!

Can I make this recipe vegan?

I have not tried making this recipe vegan yet, so I cannot give you a definite answer but my best guess would be to swap the egg for a flax egg. To make a flax egg, simply mix 3 tbsp water with 1 tbsp ground flaxseed and let sit in the fridge to thicken for 10-15 minutes. Let me know if anyone tries this out!

Can I make this recipe without a blender?

Yes! Just buy oat flour at the store (you can find it at most grocery stores and it is inexpensive or order on Amazon). Mash your banana in a large bowl with a fork or potato masher and then add the rest of your ingredients and stir.

What are the best toppings to use?

Here, I went with the classic butter and maple syrup but these would also be delicious topped with peanut butter or almond butter, more banana slices, or even some caramelized bananas (yum!)

Chocolate Chip Pancakes

Ingredients

  • 1/2 cup oats
  • 1 banana
  • 1 egg
  • pinch salt
  • 1/2 tsp baking soda
  • chocolate chips

Instructions

  • Add all ingredients to a blender except for chocolate chips and blend until smooth. Add in your chocolate chips and stir.
  • Lightly grease pan in butter or oil and turn heat to med/low. Spoon batter onto pan and cook until small bubbles start to form (a few minutes) and then flip. 
  • Cook another few minutes, add toppings of choice, and enjoy!
