Healthier Crunch Bars (Gluten Free)

These Healthier Crunch Bars are gluten-free, can be made vegan, and have only 3 ingredients. They’re SO easy and taste even better than the original you grew up with!

It’s no secret that I’m a gal who has a sweet tooth ๐Ÿ˜† I love making healthier versions of my favorite treats growing up because I still get to enjoy them, but know I’ll feel much better afterward! By focusing on real-food ingredients, we’re leaving out artificial dyes, colors, and additives – the stuff that isn’t necessary and can upset our gut (when consumed often).

We all know and love the original crunch bars, but I don’t love the long list of additives thrown in… SO this recipe is made of only 3 ingredients!! But I promise the flavor and texture are just as good (if not better) than what you’ve had before. The chocolate and nut/seed butter creates a smooth, creamy base and the rice cereal gives the ULTIMATE crunch factor.

Once you combine all the ingredients, freeze, and they’re ready to go you can cut the squares any size you like! Cut them bigger to grab for a treat or cut them into smaller bite-size pieces to pop in your mouth as a snack. Either way, they’re amazing to have prepped for the week!

What you’ll need to make these Healthier Crunch Bars:

Chocolate chips – I love using dark! Choose your favorite dairy-free chocolate as a vegan substitution.

Nut/seed butter – I used organic peanut butter because it’s super creamy!

Rice cereal – I used organic from Whole Foods.

Sea salt – optional for topping but helps bring out the chocolate flavor.

Healthier Crunch Bars

Ingredients

  • 1/2 cup chocolate chips
  • 1/3 cup nut/seed butter
  • 1/3 heaping cup rice cereal

Optional: sea salt for topping

    Instructions

    • Add chocolate chips and nut butter to a bowl. Heat in the microwave in 15 second intervals (stirring between each) until melted (you could also do on the stovetop). Stir in rice cereal.
    • Pour into a parchment paper lined pan (I used a loaf pan). Spread evenly and tap pan on the counter a couple times to remove any air bubbles.
    • Freeze for a couple of hours, slice, top with sea salt, and enjoy!!
